Vegan Gluten Free Pancakes

I made these delicious, fluffy gluten free pancakes using coconut flour by Niulife. 

Coconut flour can be a healthier alternative to normal white wheat flour. However it can be a bit trickier to work with as it doesn't bind as well. 

If you follow this recipe you will get nice, light and fluffy vegan pancakes that you can have for breakfast, or pack for work (or in the kids lunchboxes) as a delicious snack. 

Vegan Gluten Free Pancakes

3 tablespoons coconut flour

3/4 teaspoon baking powder

pinch salt

1/2 tsp coconut sugar 

1 tablespoon egg replacer 

1/8 cup cocoquench 

1/8 cup sparkling water (to make them fluffier) if you prefer dense you can use more coconut milk

Toppings: Coconut syrup, blueberries & I used the Hersheys chocolate syrup. 


  1. Pre heat your frying pan.
  2. Combine all ingredients in a bowl and whisk until thick.
  3. Add to fry pan and smooth with a spoon. Cook over medium heat until it turns solid and carefully flip. Note, they won't bubble as much or cook quickly like normal pancakes. 
  4. Serve with your choice of toppings!
